Chamomile Ginger Tea with Cucumber Watercress Sandwiches

This meal is perfect for high tea, or just a healthy lunch. It has a very refreshing and sweet taste.

To make the tea you need:
1 TBS Loose Chamomile tea
1 tsp Fresh or Frozen crushed ginger
1 or 2 TBS Honey
a tea ball
Both ingredients in the tea also have known special qualities. Chamomile has a calming effect, and when tested with rats it had and anti anxiety effect. Ginger has been used as a medicine in eastern medicine for centuries. I personally enjoy it's effects when I get seasick. A little bit of ginger and my stomach is completely settled.

Bring your water to a boil, then let cool for about two minutes. Pour the hot water into the cup and steep the tea for ten minutes.
Add Honey and enjoy
To make the sandwich you will need:
Cream Cheese (room temp)
Cucumber (peeled)
Bread of choice
First rinse the watercress and remove the stems from the leaves. Watercress has a peppery taste, and is a member of the cabbage family. It also has a significant amount of iron, calcium and folic acid, in addition to vitamins A and C.
Remove the crusts from the bread, and spread a thin layer of cream cheese on each slice
Thinly slice the cucumber and arrange it on the bread
Place the watercress leaves on top and close the sandwich. Slice the sandwich on the diagonal.
